NG+ Sword Saint demolished me especially because I tried it with increased hardship (chip damage even when blocking). TLDR: Isshin the Sword Saint kicked my behind so many times I had to give up and come back to beat him. Genchiro, Father Owl, and Isshin Sword Saint were my biggest road blocks where I needed to watch multiple strategies and practice over and over to finally overcome them. Still, the bosses in Sekiro took multiple YT strategies to beat, you could cheese some bosses but most of them had you had to 'git gud' to progress. I've beaten all dlc content for these games available as well, so have extensive experience with tough Fromsoftware boss fights. I've beaten DS3, Bloodborne, DS2, and now finally this game as well.
